  • 4 boneless pork loin chops, about 5 ounces each
  • 1 1/2 pounds potatoes, cut into 1-inch pieces
  • 2 crisp apples, cored and sliced
  • 1 cup unsweetened apple juice
  • 1 tablespoon olive oil
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon salt
  • Black pepper to taste

Directions

  1. 1Season the pork with half the rosemary, salt, and pepper
  2. 2Heat the oil in a deep skillet and brown the pork 2–3 minutes per side
  3. 3Transfer pork to a clean plate
  4. 4Add the potatoes, apples, apple juice, and remaining rosemary to the skillet
  5. 5Cover and simmer 18–22 minutes, until the potatoes are nearly tender
  6. 6Return the pork and its juices to the pan and cook until it reaches 145°F
