WHAT YOU'LL NEED

Ingredients

  • ✓1 1/4 pounds plain boneless pork loin, cut into 1-inch pieces
  • ✓1 1/2 pounds russet potatoes, scrubbed and cut into 1/2-inch cubes
  • ✓1 pound fresh broccoli, cut into small florets
  • ✓1 small onion, cut into wedges
  • ✓2 tablespoons olive oil, divided
  • ✓1 teaspoon paprika labeled gluten free
  • ✓1 teaspoon garlic powder
  • ✓1/2 teaspoon dried thyme labeled gluten free
  • ✓3/4 teaspoon salt
  • ✓Black pepper to taste

LET'S COOK

Directions

  1. 1Heat oven to 425°F and line two rimmed sheet pans
  2. 2Prepare the vegetables before handling the pork and keep raw pork and its juices separate from other food
  3. 3Toss the potatoes and onion with 1 tablespoon oil and half the seasonings, spread on the first pan, and roast 15 minutes
  4. 4Toss the broccoli with the remaining oil and seasonings in a clean bowl and spread on the second pan
  5. 5Add the pork to the second pan, turning it with the seasoned broccoli, and wash hands and sanitize surfaces after handling raw pork
  6. 6Roast both pans 15–20 minutes more, turning the potatoes once, until the potatoes and broccoli are tender and the thickest pork pieces reach at least 145°F on a food thermometer
  7. 7If the pork finishes first, move it with clean tongs to a clean plate while the vegetables finish
  8. 8Rest the pork at least 3 minutes, then divide the pork and vegetables among four plates
  9. 9Refrigerate leftovers in shallow containers within 2 hours, or 1 hour above 90°F, keep at 40°F or below, and use within 3–4 days
  10. 10Reheat leftovers to 165°F
