  • 2 pounds frozen cooked mussel meat, thawed, or fresh cleaned mussels
  • 1 can (28 ounces) crushed tomatoes
  • 3 cups cooked rice
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning labeled gluten free
  • 1/2 teaspoon salt

Directions

  1. 1If using fresh mussels, discard any cracked shells or open shells that do not close when tapped
  2. 2Heat the oil in a deep lidded skillet and cook the onion 5 minutes
  3. 3Add the garlic and Italian seasoning for 30 seconds
  4. 4Stir in the tomatoes and salt and simmer 8 minutes
  5. 5Add the mussels, cover, and cook until steaming and fresh shells open, about 5–7 minutes
  6. 6Discard any fresh mussels that remain closed
