- ✓1 tablespoon olive oil
- ✓1 lime
- ✓1/2 teaspoon salt

Directions
- 1Heat oven to 425°F
- 2Toss the sweet potatoes with the oil and half the salt
- 3Roast on a rimmed sheet pan 22–25 minutes, turning once, until tender
- 4Meanwhile cook the pork in a large skillet over medium heat, breaking it into small pieces, until it reaches 160°F
- 5Carefully drain excess fat
- 6Stir in the cumin, paprika, remaining salt, beans, and corn
- 7Cook 5–6 minutes, until steaming
- 8Divide the sweet potatoes and pork mixture among four bowls and finish with lime juice
