- ✓1 large egg
- ✓1 cup certified gluten-free rolled oats
- ✓1 small onion, finely diced
- ✓1/2 cup milk or unsweetened dairy-free milk
- ✓1/3 cup ketchup labeled gluten free and yeast free
- ✓1 teaspoon garlic powder
- ✓3/4 teaspoon salt
- ✓Black pepper to taste
- ✓2 pounds potatoes, peeled and cubed
- ✓1 tablespoon butter or olive oil

Directions
- 1Heat oven to 375°F
- 2Mix the beef, egg, oats, onion, milk, garlic powder, salt, pepper, and half the ketchup
- 3Shape into a loaf in a baking dish and spread the remaining ketchup on top
- 4Bake 40–45 minutes, until the center reaches 160°F
- 5Meanwhile boil the potatoes 15–18 minutes until tender, drain, and mash with butter or oil and a splash of milk
- 6Rest the meatloaf 10 minutes, slice, and serve with mashed potatoes
